Food grade HPMC as thickener and improve fresh
Product Name: hydroxypropyl methyl cellulose
Production method:
The refined cotton cellulose is treated with alkali liquor at 35-40 ℃ for half an hour, pressed, the cellulose is crushed, and properly aged at 35 ℃, so that the average polymerization degree of the obtained alkali fiber is within the required range. Put the alkali fiber into the etherification kettle, successively add propylene oxide and methyl chloride, etherify at 50-80 ℃ for 5h, and the maximum pressure is about 1.8MPa. Then add an appropriate amount of hydrochloric acid and oxalic acid to the hot water at 90 ℃ to wash the material, so as to expand the volume. Dehydrate with centrifuge, wash to neutral, when the water content in the material is less than 60%, dry with hot air flow at 130 ℃ to less than 5%, and finally crush the product through 20 mesh sieve.
Application of HPMC in food industry:
1. Canned citrus: it can prevent the citrus glycosides from being decomposed to whiten and deteriorate during preservation, so as to achieve the fresh-keeping effect.
2. Cold fruit products: added to fruit juice and ice to make the taste better.
3. Sauce: used as emulsion stabilizer or thickener for sauce and tomato sauce.
4. Cold water coating and polishing: it is used for frozen fish storage to prevent discoloration and quality degradation. After coating and polishing with methyl cellulose or hydroxypropyl methyl cellulose aqueous solution, it is frozen.
5. Adhesive for tablets: as the forming adhesive for tablets and granules, it has good collapsibility (rapid dissolution, collapse and dispersion when taking).
